Ever wondered whether you can make a soup with lentils and beef? Well, now you know – this ground beef and lentil soup recipe exists and it’s super good. It’s easy to make and pretty healthy too, also very rich in two things: iron and protein!
So if you’re ready for a nutritious soup with ground beef, let’s see what you need!
Ground Beef Lentil Soup Ingredients
Ground beef. You can also use any other type of ground meat you have or enjoy, if you don’t have beef. You will obviously just need to change the name, which I hope won’t haunt you in your dreams at night.
Lentils. You can use cooked, leftover or dry lentils. I used leftover lentils, which shortened the cooking time and was pretty awesome. If using dry lentils – add them from the start of the recipe!
Vegetables. You just can’t make a good soup without an onion, I dare you. So we need one. Also, let’s throw in some potatoes, carrot, garlic, red chili pepper (optional), grated ginger and whatever else you have (I had some broccoli florets so I threw them in).
Spices and herbs. Like cumin, fresh parsley or basil, paprika and oregano. You can also go for cilantro or basil here.
Stock. You can use whatever kind of stock you enjoy!
Tomato paste. Or tomato sauce.
How To Make Ground Beef and Lentil Soup
Now roll up your sleeves, here’s what you need to do to make the ground beef and lentil soup:
Thinly chop the onion, chili pepper, carrot and potato. Then mince the garlic and grate the ginger
Saute the ground beef with the paprika and oregano for about 2-3 minutes in olive oil, breaking it apart with a spatula.
Stir in half of the garlic and onion until fragrant.
Then add in the lentils (if dry), black pepper, chili pepper, ginger, carrot, broccoli florets and potato and stir together.
Cover with stock (or water), add salt and pepper and bring to a boil.
Once boiling, reduce the heat and let the soup simmer for 25 minutes.
Then, once the lentils are tender, stir in the tomato paste or tomato sauce and simmer for 10-15 more minutes.
Serve with minced garlic, lemon or lime juice, freshly chopped parsley or basil and jalapeno and enjoy!
How To Store
This recipe doesn’t make a huge batch, but if you do have leftovers – transfer them to an airtight container and keep in the fridge for about 4 days. If possible, reheat on the stove!
